木瓜雪耳糖水 (附食譜) Papaya and Snow Fungus sweet soup (Recipe Included)


前幾日同好友打邊爐,我順便煲咗個

『木瓜雪耳糖水』等大家滋潤吓。

​喺英國咁乾燥嘅天氣,飲碗清甜嘅糖水真係好舒服。雪耳又有美顏作用,簡簡單單煮一煲,大家食完火鍋潤一潤就最啱.


 A few days ago, I had a hotpot gathering with my friends and prepared this Papaya and Snow Fungus Sweet Soup as a refreshing treat.

​Everyone found it very soothing, especially with the dry weather we’ve been having in the UK. It’s a simple way to stay hydrated and enjoy some natural skin benefits. It’s the perfect dessert to serve after a heavy meal
























材料:
木瓜 (1 個)
雪耳 (2 個)
南北杏 (適量)
清水 (3 公升)
黃冰糖 (約 180g)

做法:
​1)  雪耳用水浸泡約 2 小時至發大,用剪刀剪去底部黃色硬心,將雪耳撕成小塊.

​2)  木瓜去皮、去籽,切成大約 2-3 厘米的方塊備用.

​3)  大火煮滾後加入雪耳及南北杏,轉小火煲約 30 分鐘,直至雪耳開始變軟.

​4)  加入黃冰糖,繼續小火煮 10 分鐘至糖完全溶化。最後加入木瓜,維持小火煮 8-10 分鐘即可.

愛心提示:
1)  建議選用熟透但仍結實的木瓜.

2) 黃冰糖份量可隨個人喜好增減.


Ingredients:
​Papaya: 1 large (ripe but firm)
​Dried Snow Fungus: 2 pieces
​South & North Apricot Kernels: A handful (approx. 20 g)
​Water: 3 Litres
​Yellow Rock Sugar: 180g (adjust to taste)

​Instructions:
​1)  Soak the snow fungus in water for about 2 hours until expanded and soft. Use scissors to trim off the hard yellow base (the core), then tear or cut the fungus into small bite-sized pieces.

​2)  Peel the papaya using a peeler, remove the seeds, and cut the flesh into 2-3 cm cubes. Set aside.

​3)  Bring a large pot of water to a boil. Add the prepared snow fungus and apricot kernels. Reduce to low heat and simmer for about 30 minutes until the snow fungus begins to soften.

​4)  Add the yellow rock sugar and continue to simmer for 10 minutes until completely dissolved. Finally, add the papaya chunks and cook on low heat for another 8-10 minutes. Serve warm or chilled.

​Money EE's Heartfelt Tips:
1)  ​Choosing Papaya: I recommend selecting a papaya that is fully ripe for sweetness but still firm to the touch, so it doesn't break apart during cooking.

2)  ​Sugar Level: The amount of yellow rock sugar can be easily adjusted according to your personal preference for sweetness.
