蠔油薯仔炆雞翼 (附食譜) Braised Chicken Wings with Potatoes in Oyster Sauce (Recipe Included)


又係一道平平無奇、但非常經典嘅家常菜 【蠔油薯仔炆雞翼】。 ​呢道菜雖然簡單,但亦係我老公嘅至愛。其實喺英國買齊材料煮呢個餸一啲都唔難,大家今晚係咪都準備咗呢份家常味道呀?

It’s just another simple, everyday dish, but it’s a true classic — Braised Chicken Wings with Potatoes in Oyster Sauce.

​Although it's a very straightforward recipe, it’s my husband’s absolute favorite. It’s not difficult at all to find all the ingredients here in the UK. Are you all preparing this familiar home-cooked taste for dinner tonight?

 




​🥘 材料:
​雞翼 (8 隻)
​薯仔 (2 個,去皮切件)
​洋蔥 (1 個,切塊)
​蒜頭 (5 粒,切碎)
​乾蔥 (1 粒,切碎)

​🥣 調味料:
​蠔油 (約 2 湯匙)
​生抽 (1 茶匙)
​老抽 (半茶匙 — 主要用作上色)
​黃糖 (1 茶匙)
​暖水 (適量)

​🍳 做法:
​1)  雞翼解凍後,用鹽水浸 30 分鐘洗淨. 瀝乾水並用紙巾印乾,加入少許海鹽拌勻底味.

​2)  薯仔去皮切塊,洗淨後用水浸住備用(防止變黑).

​3)  熱鍋下油,將雞翼煎至兩面金黃色,盛起備用.


​🥘 Ingredients:

​Chicken Wings (8 pcs)
​Potatoes (2 pcs, peeled and cubed)
​Onion (1 pc, chopped)
​Garlic (5 cloves, minced)
​Shallot (1 pc, minced)

​🥣 Seasoning:

​Oyster Sauce (approx. 2 tbsp)
​Light Soy Sauce (1 tsp)
​Dark Soy Sauce (½ tsp — mainly for color)
​Brown Sugar (1 tsp)
​Warm Water (as needed)

​🍳 Instructions:

​1)  After defrosting, soak the wings in salt water for 30 minutes and wash them thoroughly. Drain and pat dry with paper towels, then toss with a pinch of sea salt to season.

​2)  Peel and cut the potatoes into chunks. Rinse and soak them in water until ready to use (to prevent browning).

​3)  Heat oil in a pan and sear the chicken wings until both sides are golden brown. Set aside.

​4)  In the same pan, add more oil if needed and stir-fry the potatoes until the edges are golden. Add the onion, shallots, and garlic and sauté until fragrant. Stir in the oyster sauce, light soy sauce, and dark soy sauce. Pour in enough warm water to cover the ingredients, cover with a lid, and simmer on low heat for about 7 minutes.

​5)  Remove the lid, add the brown sugar, then cover and simmer for another 3 minutes. Taste and adjust seasonings to your preference before serving.

​✨ Friendly Tips:

​1)  Soaking the cut potatoes in water prevents them from oxidizing and turning dark.

​2)  When tasting at the end, you can adjust the amount of oyster sauce or add a pinch of salt to enhance the flavor according to your personal taste.
